Ingredients

  • 3 tbsp Butter-salted or unsalted I prefer to use salted butter and then I don't need to add salt or as much salt later
  • 1 ea Yellow Onion
  • 3 ea Carrots
  • 3 stalks Celery
  • ½ cup Long Grain White Rice
  • ½ cup Wild Rice
  • 1 lb Boneless Skinless Chicken Thighs
  • 3 cloves Garlic
  • ¼ cup AP Flour or Sourdough Starter Discard
  • 6 cups Bone Broth You can use Chicken Broth, but I enjoy the extra health benefits and protein in Bone Broth.
  • 1 cup Half and Half
  • 1 tbsp Soy Sauce
  • 1 tsp Hot Sauce Hot Sauce is your preference, use one that you love the flavor of.
  • 1 tbsp Dried Rosemary
  • 1 tbsp Dried Thyme
  • 1 tsp Italian Seasoning
  • ¼ tsp Mustard Powder
  • ¼ tsp Paprika
  • 1 tsp Salt

Equipment

  • 1 Dutch Oven

Method

  1. 1. Prep your veggies and chicken. Dice up your celery, onion, and carrots and combine in a bowl. Dice up boneless skinless chicken thighs and place in a separate bowl with your seasonings (paprika, mustard powder, Italian seasoning, and salt) and set off to the side.
    2. Heat your Dutch oven over medium heat. Once heated, melt the butter. Once melted, add your carrots, celery and onion. Sauté the vegetables for roughly 5 minutes, stirring occasionally. Mince your garlic and add to the vegetables.
    3. Let garlic sauté with the vegetables for about 30 seconds and then add in your diced and seasoned chicken. Cook the chicken until the pieces are no longer pink and turn white.
    4. If you use sourdough starter, add 1/4 cup of your sourdough starter discard or AP flour to coat the vegetables and chicken.
    5. Slowly begin to stir in your bone broth, half and half, soy sauce and hot sauce. The hot sauce is truly a preference and not necessary but adds great depth to the broth. Once all liquids are combined, add in your rice and stir.
    6. Turn the heat up and bring the soup up to a boil. Once it reaches a boil, turn the heat back down to medium to medium-low to simmer for 15-20 minutes. This could take slightly longer depending on the rice. Be sure to stir frequently so that the rice does not stick.
    7. Taste the soup to adjust any seasonings or broth levels depending on how much broth your rice absorbs. Ladle soup into bowls.
    8. Garnish soup with fresh parsley or freshly grated parmesan cheese for a delicious touch.
