The journey of making sourdough is never-ending and the learning never stops. I put this recipe to the test several times to make sure that it was fail-proof. It turned out so good every single time. I even made it for my family on Christmas. I can confidently tell you that my same day sourdough bread recipe is not only the easiest recipe to follow, it’ll deliver the most beautifully golden and delicious sourdough loaf.

It has taken a lot of trials making my sourdough bread differently, but I guarantee you will love this version.

If I could choose one way to eat sourdough bread for the rest of my life, it would be with a couple pats of grass-fed butter and drizzled with organic raw honey. There is no better sourdough bread snack to me than that. My homemade sourdough bread has stopped us from buying store-bought bread all together. My husband said nothing will ever taste as good as this sourdough bread. 🙂

The only difference with this recipe is that you’ll feed your starter the night before right before you go to bed. The reason I say this is same day sourdough bread because typically if you have an established starter, you’re feeding it daily anyway, whether or not you’re making bread every day.
From start to finish including feeding the starter, the entire process is roughly 20-24 hours. But the time from making the actual dough to the time you bake it, is all in the same day. What I love about this same day sourdough bread recipe is that you can tailor it to your own personal schedule. This is what just works best for my days at home being a stay at home mom of a two year old.

STEP One
If you fed your sourdough starter the night before, you’ll want to begin this step around 8 or 9am. It all depends on when you want your bread done that evening.
Start by adding 1/2 cup of active bubbly starter to 1 1/3 cups of water. Mix that together to create a milky consistency and the starter is dissolved.
After the starter and water are combined, add 3 1/2 cups of bread flour and 2-3 teaspoons of salt. Mix together to form your shaggy dough.
Step Two
Now that your sourdough dough is combined and in a shaggy texture, cover the bowl with plastic wrap, beeswax wrap, or a damp tea towel for 30 minutes to let the water hydrate the flour.
After 30 minutes begin one round of stretch and folds, 4 stretches total equal one round.
Cover the dough back up and let sit for another 30 minutes to one hour.
Step Three
We will complete one more full round of stretch and folds, totaling 2 rounds at this point in our bread making process.
Cover your dough back up, and let rest on the counter for the next 5-8 hours to ferment and rise. This all depends on the temperature of your kitchen, maturity of your starter, etc. Give or take a few hours depending on those factors.

Step Four
After your sourdough rises and is ready to bake, you’ll know when you press your finger into the dough and it starts to bounce back.
Flour a surface of your choice to shape the dough. Transfer the dough from the bowl and onto your floured surface to create the shape you desire.
Transfer your shaped dough into a floured banneton to rest/hold shape for about 30 minutes.
While your dough is resting, preheat oven with your dutch oven inside to 465 degrees Fahrenheit.
Step Five
Lay down a piece of parchment paper and lightly dust with flour. If you have a bread sling, you can use that instead.
Once oven is preheated, transfer the dough from the banneton to the parchment paper or bread sling.
Dust the top of your dough with flour and score the dough with a bread lame with the design of your preference. It can be as simple as one long expansion score along one side.
Step Six
Transfer the parchment paper of dough to your preheated dutch oven.
Bake the dough, with the lid on the dutch oven for 25 minutes.
After 25 minutes, remove the lid and bake another 20 minutes, or until the top of golden brown.
Step Seven
Transfer your bread to a cooling rack and let cool for at least an hour before eating.
